We’re used to turning to a nice bottle of wine when we’re enjoying a delicious Italian pizza. What if we told you that it was perfectly acceptable (and maybe even more fabulous) to have that slice of pizza with a bottle of Prosecco?

We were introduced to the concept on a beautiful night at Fiorellino. We enjoyed various pizzas, appetizers, and Prosecco of course! Our favourite way to enjoy Prosecco is in an Aperol Spritz. Spritz was the drink of the summer and we are unabashedly enjoying it throughout the fall as well. If you want to make it at home, it’s quite simple. All you need is Prosecco, Aperol, and a splash of soda. Delish!

The Italian Chamber of Commerce in Canada in collaboration with Prosecco DOC treated us to a lavish evening of pizza and Prosecco and we’re ashamed we hadn’t thought of the combination sooner. We were taught that certain pizzas go better with a Dry or Extra Dry Prosecco, while others go best with a Brut Prosecco.

We enjoyed 3 pizzas at Fiorellino with the Prosecco DOC Dry or Extra Dry. First, the simple and incredible Margherita, with tomato and fior di latte. Next, an interesting take on what is usually a pasta dish, the Cacio e Pepe pizza, with fior di latte, pancetta, black pepper, and pecorino romano. Finally, the Napoli pizza was for the fish lovers, with tomato, oregano, pickled chili peppers, and anchovies. The Dry Prosecco DOC paired wonderfully and we were going for seconds.

Now, we were definitely quite full at this point, but when Fiorellino hands you a slice of pizza, you don’t say no. You eat 5. With the Prosecco DOC Brut, we had another 3 pizzas. The Mais e Cotto pizza was really special, with prosciutto cotto, corn, and fontina cheese. Next, the Melanzane e Zucchini pizza was a hit, with roasted eggplant, zucchini, cherry tomatoes, mint, and garlic. Finally, the Mortadella pizza was a splash of meaty goodness, with mortadella Bologna, smoked provola, ricotta, pistachio, and pesto. Once again the Prosecco DOC Brut paired perfectly, and we were full to bursting.

The Italian Chamber of Commerce in Canada sure knows how to put on a lavish evening! The pizzas were incredible (as usual, Fiorellino delivers excellent food), and the Prosecco DOC was flowing. The next time you’re having a pizza night with friends and family, think about pairing it with a glass of Prosecco!
